Homemade tomato soup so easy and quick

I'm eating some now and wanted to share. lol

For one person:

2 tomatoes 

garlic (how much you like it depends on how much you put in)

Water

Salt

oil

---------------------------

Chop garlic and put in pot with a little oil and sautee it until it just starts to brown. 

Cut up tomatoes, peel and all and put in the pot.

Add enough water to just cover the tomatoes. 

Add salt to taste. 

Bring to a boil and then simmer for 15 minutes or so. 

Strain out the chunks of tomato. Or you can eat it if you want. I strain mine out. 

Eat it!  

 

 

Thank you for this. Love tomato soup so I will definitely try this. Easy and non time consuming too. Win win IMO ?

Maybe I should put some basil in next time. I used coconut oil to sautee the garlic, man did that smell good when it was cooking. :)
